I love days like today when I get to spend a bit of time in the kitchen and I test new recipes and make old ones, they are some of my favourites. The only thing is, today I should have really been sat in my study doing my university work because I have some big deadlines coming up. Why is it when I have the most work to do I have the most inspiration for recipes? Is that just me or does anyone else find this?

So I don’t have any particular recipe for you today I just thought I would share a couple of things that I made today.

Caramelised Onion & Cheese Soda Bread

First for lunch I made a lovely caramelised onion and cheddar soda bread having been inspired by the creations on the Great British Bake Off last week. This recipe still needs a bit of tweaking before I will share it with you all but the bare bones are there. I have not really delved into the world of soda bread much before because I made a plain one once and D really didn’t like it. Looking back I think it was slightly undercooked (shh don’t tell him I will never live it down) and probably slightly overworked. This one however seemed to work quite well. Let us just go back a second and think about what they made on Bake Off this week though, weren’t they amazing? I loved the idea of Ugne’s sweet chocolate one and I think I may try this one next because I think soda bread is calling out to be sweet. The other one that really caught my attention was Alvin’s, so beautiful. I had eaten dinner by that point but I was ready to lick the television screen when he made that. Anyway here is my humble offering…

Homemade Nutella

Secondly I had intended to do a slight variation on Deliciously Ella’s coconut energy bites and write about it on here, however I forgot to pick up dates when we were out shopping. I don’t know what it is, the supermarket on a Sunday really makes me anxious and stressed there are so many people and you think sometimes a fight might break out as two people go to get the last loaf of bread from the shelf. That didn’t happen by the way I just always think if it was to happen it would happen on a Sunday. So instead I made healthy Nutella from Deliciously Ella also. I love Nutella, I think it is the bees knees but I know it is not the greatest and when i have so much uni work to do I try to keep my diet healthy even though it is the last thing I feel like I know in the long wrong I will be thankful. So I tried it. I don’t have a powerful food processor so I just used our hand held blender and although it is not totally smooth as it probably should be I am pretty happy with the outcome. I am not going to lie to you, it doesn’t taste like Nutella but it satisfied my craving and I will definitely be making it again and perhaps add a bit more water next time. Since making it I have essentially been spooning it out of the bowl. So here are the results, excuse me whilst I go lick out the bowl now.

As well as this we do have a nice big pot of bolognese on the cooker at the moment bubbling away nicely ready for going in the freezer and a roast beef and yorkshire pudding dinner being made as we speak, not quite the weather for it but never mind. It has been a busy day but I have loved it and I did even manage to squeeze in a few hours of uni work so I can’t complain really.
